IRISH POTATO CANDY
This week Peter and crew whip up something truly Irish! Celebrate St Patricks Day with the help of Pete’s delicious treats. This recipe needs no cooking at all, just mix all the ingredients and chill. To be sure !
INGREDIENTS
1/4 Cup of Butter (softened)
1/2 (8 ounce) package of Cream Cheese
1 Teaspoon of Vanilla Extract
4 Cups of Confectioners' Sugar
2 1/2 Cups of Flaked Coconut
1 Tablespoon of Ground Cinnamon
STEPS
In a medium bowl, beat both the butter… and the cheese… until they are well combined and smooth.
Add in the vanilla extract… and the Confectioner’s Sugar. Mixing it all together until smooth.
Mix in the coconut. You can use your hands if necessary.
Roll and form them into balls, or into potato shapes.
Roll them in the cinnamon… and place them onto a cookie sheet.
Chill them in the fridge in order for them to set. If you want them darker in color, you can roll them in cinnamon again, if you desire.
